TWO Ingredient Banana Oat Cookies
I dont know about you, but I am always looking for something to do with my over ripe bananas. Sometimes we go through a bushel of bananas like a pack of wild monkeys, other times they just lay around. So its tough to get the exact right amount for my family!
I hate chucking food so I usually try to make banana bread. This time I decided to make some cookies!
All you need are some mushed bananas and oats.
Mush the bananas and mix together with a cup of oats.
Ok I said two ingredients but I actually went ahead and added chocolate chips as well so technically it can be 2 or 3.
I rolled them into balls and placed them on a greased cookie sheet (or is it cooking sheet? no one knows, no one will ever know!)
Then I used a fork to mush them into cookie shapes. Unlike regular cookies, these will not flatten in the oven.
I baked them at 350 degrees for 12 minutes. I would check them at about 8-10, they are better when they are slightly "under" cooked.

- 2 over ripe bananas
- 1 cup of oats
- 1/4 cup of chocolate chips (optional)
Instructions
- mush the bananas in a bowl
- add a cup of oats and chocolate chips (optional) and mix together
- roll the mixture into a ball
- place on a greased cookie sheet
- use a fork to flatten into a cookie shape
- bake for 12 minutes at 350 degrees
