No Bake Almond Chocolate Protein Bars

Have you ever craved something sweet but felt guilty and then stopped yourself from eating what ever it is you found in your pantry? I don’t have a huge sweet tooth but every now and then I do crave something sweet and savory and that’s where these come in.


If you’re looking for a sweet but healthy snack that’s protein fueled, your search stops here. The don’t require any baking and they’re eat to make. They take about 15 minutes or less to prepare and then you place them in the fridge or freezer for 45 minutes. In about an hour they’re ready! These taste like a candy bar and they don’t hit the waistline that much. I enjoy making protein balls and bars but these have to be by far my favorite. They don’t taste healthy and they’re easy to devour in one seating, no lie, they’re that good. I don’t eat peanut butter but I’m certain you can substitute the almond butter with any nut butter. I also used gluten free (GF) chocolate but I know you can use any type of chocolate. If you freeze them, they kind of taste like a Twix bar. I could’ve easily eaten the entire tray 😂 These will not last long in my freezer.


I used a Wilton non stick tarte/quiche pan, it’s extra long 14 X 4.5 inches. I was able to get 8 bars but if you double the recipe you can use a larger pan and double the amount.

No Bake Almond Chocolate Protein Bars

Ingredients
For the almond protein
  • 1 cup almond butter
  • 2.5 tbsp melted coconut oil
  • 3 tbsp @Lakanto maple syrup
  • 1.5 tsp vanilla
  • 2.5 scoops of @drinkorgain vanilla protein powder
  • Dash of Himalayan sea salt
  • Cinnamon to taste
  • Flaky sea salt (opt)
For the chocolate topping
  • 1 cup @enjoylifefoods GF chocolate
  • 4 tsp melted coconut oil
Instructions
For the almond protein
Mix until all ingredients are combined and a paste forms.
Spread onto a non stick pan, pressing firmly.
Sprinkle with a few mini chocolate chips if you desire.
Freeze until the next step is ready.
For the chocolate topping
Combine ingredients in a microwave save bowl & microwave for 30sec at a time until the chocolate melts & it is smooth & silky.
Remove almond butter mixture from freezer.
Pour chocolate over the almond butter layer until it’s completely covered and and has a smooth coating.
Sprinkle with flaky sea salt and place in freezer for 45 min to an hour or until chocolate and almond butter have solidified. Slice & Enjoy!

    20+ grams of sugar and 400+ calories is not a healthy snack it's a candy bar
