If you really enjoy pumpkin you will want to try these Sinful Pumpkin Oreo Bars. Pumpkin desserts are all the rage right now. This bar recipe is a layered dessert consisting of pumpkin, cream cheese, Oreos, and chocolate chips. I will be bringing this dessert to our next gathering, will you?

What Will I Need to Make these Pumpkin Oreo Bars?


Brownie Ingredients include 1 – 13×9 box of milk chocolate brownie mix, 3 large eggs, water, and canola oil. Make sure you get the family-size package of Halloween Oreos to get the festive orange color for the bars. Last but not least you will need mini chocolate chips.


The ingredients for the Pumpkin Cheesecake portion of the dessert are cream cheese, softened, and pumpkin puree. You will also need white sugar, 2 large eggs, pure vanilla extract, and kosher salt. (ingredient measurements are included in the recipe card below)

Ingredients

Brownie Ingredients

  • 1 box of brownies 13×9 size
  • 3 eggs large
  • 1/4 C water
  • 1/2 C canola oil
  • 1 Halloween Oreos family size package
  • 1/2 C chocolate chips mini

Pumpkin Cheesecake ingredients

  • 12 oz cream cheese softened
  • 2/3 C pumpkin puree
  • 2/3 C sugar
  • 2 eggs large
  • 1 tsp pure vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/8 tsp kosher salt

Instructions

Brownie Directions

Preheat oven to 350 degrees (F) and line a 9×9 baking pan with parchment paper. Using a large bowl and hand mixer, beat together all brownie ingredients.
Using a large bowl and hand mixer, beat together all brownie ingredients.
Pour batter into the baking dish.
Top the brownie batter with a layer of whole size Oreos.
Set aside.

Pumpkin Cheesecake Directions

Using another large mixing bowl, beat together the cream cheese, pumpkin puree, sugar, vanilla, pumpkin pie spice, and salt until combined and smooth.
Beat in the eggs, 1 at a time until combined and smooth.
Pour the cheesecake batter over the brownie batter.
Chop up about 5-8 oreo cookies and sprinkle on top of the cheesecake batter
Sprinkle the ½ C of mini chocolate chips on top.
Bake in the oven for about 75 minutes or until the center is set and the sides start to peel away from the parchment paper.
Allow cooling to room temperature before placing it into the fridge to cool overnight.
Cut into bars and enjoy!

Tips

  • The extra time is for putting in the fridge overnight. Obviously if you make these in the morning you could just keep them in the fridge till dessert time.
