Ingredients

  • 20 ounces miniature marshmallows
  • 3/4 cup butter
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • 24 pieces Werther's Original Soft Caramels
  • 1 tbsp water
  • 12 cups Kellogg's Apple Jacks
Instructions

Grease a 9x 13 baking dish or cover the bottom and sides in parchment paper. Set aside.
Fill a large mixing bowl with the 12 cups of Apple Jacks cereal and set aside.
Unwrap and melt Werther's caramels with water in a double boiler (or a microwave at 10 second intervals until nearly melted-stir to finish melting).
While the caramel is melting in the double boiler, place butter in a large pot and begin to melt the butter. If using the microwave to melt the caramel, begin melting the caramel when marshmallow is nearly ready.
Add the miniature marshmallows and stir to coat with butter and melt. Stir continually so it will not burn. (Also, make sure you stir the caramel in the double boiler while you are making the marshmallow and butter mixture)
When marshmallows have melted, add the vanilla and the salt. Stir to combine.
Quickly pour marshmallow mixture over the cereal in the mixing bowl. Stir to coat all of the cereal.
With buttered fingers, very lightly press half of the cereal mixture into the bottom of the 9 x 13 baking dish.
Drizzle all of the melted caramel over the first layer of the cereal and marshmallow mixture.
Lightly press the remaining cereal and marshmallow mixture on top of the caramel and allow to completely cool.
Cut into squares and store what you don't eat in an airtight container.
No double boiler-use a microwave, like stated above with a microwave safe bowl (or add the unwrapped caramel to the melting marshmallow to melt the caramel. Then, skip the drizzle step and place all of the cereal mixture into the 9 x 13 all together).
Another option: place all of the cereal mixture in the 9 x 13 pan and drizzle warm caramel over the top. You will need to do this quickly. The caramel will set up fast. Too fast for me to make it look fancy-this is why I put it in the center.
