  • 3 large zucchinis cut into zoodles
  • 2 6 ounce center cut salmon
  • 6 stocks of asparagus
  • 8 tsp pesto
  • Lemon juice to taste

Soak cedar plank in water for an hour to two hours before grilling. Spiral cut or zoodle your zucchini into a colander. Salt liberally and let stand 20 minutes. Rinse off salt and pat zoodles dry
Preheat grill to 350 degrees F. Place soaked cedar plank on the grill for 5 minutes, flip the plank and then place the salmon on the plank. Grill for 20 minutes or until internal temperature of 135 degrees F. is reached.
Spray cast iron pan with cooking spray; place zoodles and chopped asparagus into pan and fry over medium heat until tender. About 10-20 minutes. Remove from heat, add pesto and stir. The cooking can be done simultaneously with the salmon.
Add pesto to zoodles and serve with salmon!
  • Salting the noodles removes a lot of the moisture and is necessary so they're not soggy.
