One last Christmas recipe for you all for this year! This gingerbread baked oatmeal is so yummy and easy for breakfast prep. It has molasses, cinnamon, ginger, nutmeg, and cloves. All those classic Christmas flavors that we all know and love. I like to top it with a dollop of Greek yogurt mixed with a splash of heavy cream and maple syrup! And extra sprinkles of course. I always say I’m going to make these seasonal recipes year round. I usually never actually do, but this one I might! I like to make this on Sunday nights and eat it for breakfast throughout the week. You could easily double the recipe to feed more people if you want.

Ingredients

  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup milk
  • 2 Tbsp molasses
  • 1 cup oats
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon 
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • Pinch of allspice
  • Christmas sprinkles
Instructions

Preheat oven to 375° and grease a small baking dish.
In a bowl, combine egg, vanilla, milk and molasses.
Stir in the oats, baking powder, cinnamon, ginger, nutmeg, cloves, allspice, and sprinkles.
Pour into baking dish and bake for 30-35 minutes or until the edges are golden brown and the middle is set.
