I am so excited that the weather is starting to change! The days are getting longer and the sun is beating down with just a little more warmth.


Every time the weather starts to turn, my focus on food starts to do the same. I crave simple, clean ingredients that make the most fantastic dishes. And it doesn't get more simple than this! Creamy and silky burrata with fresh basil leaves and sliced tomatoes. I used plum tomatoes here but you can honestly use whatever tomato is looking fresh and rips at the store that week.


I always have a bottle of balsamic glaze on hand to add just a slight tangy sweetness to dishes just like this one. If you don't have a bottle of balsamic glaze on hand, you can always make it by adding a 1/2 cup of balsamic vinegar to a small non-stick pan and over medium heat and let it reduce 3/4 of the way. It will create a thick syrup that is just perfect to add this dish, or any salad or fish dish!


This is a perfect appetizer or a simple lunch of dinner.

Ingredients

  • 1 container burrata (usually 4 in one container)
  • 3 large plum tomatoes, sliced
  • 12 large basil leaves, stemmed
  • balsamic drizzle
  • kosher salt, to taste
  • fresh ground black pepper, to taste
Instructions

Choose your platter and begin to layer the tomato slices, slightly overlapping.
Stick the basil leaves in between the tomatoes.
Drain the burrata from the water and place on top of the tomato and basil bed. Sprinkle with kosher salt and fresh ground black pepper to taste and lastly, drizzle the balsamic glaze over top.
