Caramel Lollipop Using Jaggery(No Sugar or No Cornsyrup Lollipop)

lollipop, the most favorite treat for every kid. Same case with my daughter she loves lollipops. So i was looking for a healthier option and I found some vitamin C and natural fruit lollipops in some stores. But still they have a ton of sugar and corn syrup in them. So I came up with this idea of using my childhood favorite jaggery to make lollipops for her.


Jaggery is also known as super food sweetener. Now jaggery has becoming popular as "Healthy " Alternate for sugar. About 70% of the world’s jaggery production takes place in India, where it is commonly called “GUR”. Jaggery is often made with sugar cane juice.


You can buy jaggery at any indian grocery stores and also available on Amazon. You can get jaggery in either a large block or in powder form.

As a Indian I used to have this in most of our desserts. This is super easy and healthy yet yummy lollipop recipe. It needs basic ingredients you already have at home and can be made without any molds. You don't even need candy thermometer.


Most commercially sold lollipops contain sugar and corn syrup as main ingredients, So decided to make one without using them.


I have made different flavors by adding different toppings like sea salt, almonds and coconut flakes. You can add nuts or spices of your choice to prepare your own version.


Salted caramel one is my personal favorite. You can also add little cocoa powder(unsweetened) if you want to make them chocolatey.


Once preparing the lollipops and topping them with your favorites, let them sit at room temperature to set. And you can store this individually wrapped in parchment paper/ small plastic bag for a week in a air tight container.

Ingredients
For the Lollipop base
  • 1/4 cup jaggery(chopped)
  • 1 tbsp water
  • 1/2 tbsp butter(unsalted butter)
Toppings
  • Handful of coconut flakes
  • Handful of Crushed Almonds
  • Sea Salt
Others
  • A bowl of cold water
  • lollipop sticks
  • Parchement paper
Instructions

First in a pan add 1/4 cup Jaggery chunks/ Jaggery powder.
Then add 1 tbsp water into jaggery chunks/powder and cook on medium heat. Water prevents jaggery from burning and makes melting process faster.
Continuously stir and break bigger chunks of jaggery using wooden spatula until jaggery has melted.
Once Jaggery has melted add butter to it and stir continuously.
Once butter has melted cook the mixture for another 1 min.
After that we need to check if the mixture is ready to prepare the lollipops or not.
For that we need a cup of cold water and we are gonna add few drops of the mixture we prepared.
When we add few drops of the cooked jaggery mixture in a bowl of cold water . 1) It should hold its shaped. 2) It should not be soft.It should have rock solid texture. Then our candy mixture is ready to prepare the lollipops. You have to cook the mixture on medium heat until you get described consistency. Check every minute and stir continuously.
Once the mixture is cooked get it off the stove immediately.
Then stir and let the mixture cool down a bit so that it does not spread much.
Pour some jaggery mixture on parchment paper/ greased surface. Then dip the lollipop stick in some candy mixture and place it on the poured mixture.
Top with your favorite topping. And Enjoy!!
Let them set at room temperature and once set store individually wrapped lollipop(Parchment paper/Plastic bag) in a air tight container.
