These are hands down the easiest pancakes you will ever make! Protein Pancakes are full of, you guessed it, protein! Add your favorite pancake toppings for a delicious and nutritious breakfast that will give you energy all morning long.

How to make this recipe

  1. The first step to making protein pancakes is to mash a very ripe banana in a small bowl. Next, add in two eggs, a scoop of your favorite protein powder (mine is this one from Nutiva), and a sprinkle of ground cinnamon. Stir the ingredients together until well mixed.
  2. Next, heat a frying pan over medium heat and add a touch of cooking oil to the pan. Once the pan is hot, add a ¼ cup of the pancake batter and allow it to brown, about 2 minutes on each side. Continue with the remaining batter.
  3. Place the pancakes on a plate and add your favorite pancake toppings. Enjoy!


Equipment you will need

  • Medium-sized frying pan like these from All-clad
  • Cooking oil. My favorite is spray avocado oil.
  • Protein powder. My favorite is this brand from Nutiva. It is vegan and is very easy on my stomach.

My favorite pancake toppings

  • Of course, maple syrup makes the top of my list!
  • Vanilla dairy-free yogurt with a few fresh berries like raspberries or blackberries
  • Fresh blueberries with freshly zested lemon
  • Drizzle of your favorite nut-butter like almond butter and fresh cut strawberries
  • Drizzle of your favoitee nut-butteer likee almond butter, freshly sliced bananas, and a sprinkle of cinnamon


How to store leftovers

Leeftovers can b stored in an airtight container in the refrigerator for up to five days. Gently heat in the oven, microwave, or toaster oven then add your favorite toppings.

    I’ve made these pancakes twice + they were too liquid. I added 1 heaping teaspoon of spelt flour + whole wheat flour to thicken them up a little.

    They still tasted like banana + had the correct consistency.

    I used a collagen protein powder which might have been a finer powder than the 1 in the recipe.

      Hi there! This a thin batter but once the batter hits the pan, the eggs start to cook and they do hold their shape. I’m glad you know how to modify a recipe with the WW and spelt flour!
