This microwave protein pancake bowl is going viral right now for all the right reasons. It is super quick for those busy mornings, it is really easy, it’s packed with around 50 grams of protein, and most importantly it’s so yummy. There are so many different flavor combinations and toppings you can experiment with, but to me there is nothing better than a blueberry pancake. I use oatmeal cookie flavored protein powder because that’s what I have on hand right now, but vanilla is also a safe choice. There are so many different protein powder flavors out there so pick whatever sounds good to you! All you need to do is mix a few simple ingredients together, microwave, top with maple syrup or whatever toppings you’d like, and enjoy!

Ingredients

  • 1/2 banana, mashed
  • 1/2 cup protein pancake mix (I use Kodiak)
  • 1 scoop protein powder
  • 1/4 cup egg whites
  • 1/4 cup blueberries
  • 2 Tbsp milk
  • Splash of vanilla extract
  • Dash of cinnamon
Instructions

In a microwave safe bowl, mash half of a banana.
Add in the rest of the ingredients and mix.
If the texture is really thick, add just a bit more milk.
Microwave for 2 minutes or until set.
Top with maple syrup, berries, nut butter, or whatever you’d like.
