I remember her making this easy make-ahead dessert during the holidays. Top with whipping cream or ice cream; the perfect pairing to the tart cranberries. Ingredients

  • 2 eggs beaten
  • 1 cup granulated white sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 1 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 2 cups dry whole cranberries (can use frozen if fresh cranberries aren't available)
  • Butter Sauce:
  • 1 1/2 cup granulated white sugar
  • 1 cup half and half
  • 2 Tablespoons butter
  • 1 teaspoon vanilla
Instructions

Preheat oven to 350 degrees.
Grease 9 x 13 pan.
Mix together eggs, sugar, sour cream and vanilla.
Sift together flour, baking powder, soda and salt.
Add dry ingredients to wet.
Fold in cranberries.
Pour into greased pan.
Bake 30-35 minutes until golden brown on top.
Make butter sauce while cake is baking.
Melt butter in saucepan on medium-low. Add sugar, half and half, and vanilla. Heat and stir until boiling for 1 minute. Let cool to warm before serving over cake.
Serve with real whipped cream or ice cream.
