Mermaid Bubblegum Smoothie Bowl
What is a healthy substitute for ice cream?

Ingredients:
- 1 medium banana, frozen
- 1/2 mango, cubed (or 1/2 cup)
- 1/2 cup pink pitaya dragon fruit, frozen
- 2 tbsp Aloha vanilla plant protein
- 1/2 cup pineapple juice
- 1/4 cup unsweetened vanilla almond milk
- 1/4 tsp vanilla extract
- 3-4 ice cubes
Note: You can substitute the pineapple juice for 1/2 cup fresh pineapple if desired.
Instructions:
Place all ingredients into smoothie cup or blender in order listed, pulse a few times then blend on high for one minute, or until smooth.
Spoon smoothie mixture into a coconut bowl and garnish as desired.
I added milled flax seeds to resemble sand and cutout star fish shaped bananas to put on top. Coconut flakes are also a great topping to compliment the tropical flavors.
For an extra special touch, use a mermaid tail silicone mold, found HERE and melt dairy-free white chocolate or candy melts spoon in mold and let set.

Tips
- Optional garnishes: I added milled flax seeds to resemble sand and cutout star fish shaped bananas to put on top. Coconut flakes are also a great topping to compliment the tropical flavors.
- Note: You can substitute the pineapple juice for 1/2 cup fresh pineapple if desired. (I just didn't have room in my smoothie cup)
