Oh.Kay. Everyone. It is now officially summer and who else is ready to bask in the sun, host backyard barbecues, splash in the water, and eat some awesome food?! I know I am, and have already started the festivities. But, there is always one thing that transports me to summer immediately, and it's watermelon. Yes, watermelon. Hands down my favorite fruit and probably top food in general. When we were kids, we used to have watermelon eating contests in the backyard (is this just our strange family, or did others do this, too)?! But, it was such a blast, seeds and all. There is nothing I would change about it. I am even trying to grow my own watermelons this summer--a first!


So, let me tell you about this drink. When you are at the store next, you will want to pick up a watermelon (or 3), and get ready. This rivals snow cones and boozy slushes. All you do is freeze those watermelon chunks (turning them into smooth and luscious ice-y ness, blend it with ginger beer, lime juice (and any booze you may or may not add in), and top with a mini umbrella. Hello, best drinks on the block.

Ingredients
Watermelon Slush
  • 1 seedless watermelon, cut into chunks, frozen
  • 2 -3 12 oz bottles of ginger beer (I like Reed's)
  • 2 limes, juiced
  • 1 bottle club soda (20-24 oz)
Instructions
Watermelon Slush
Cut the watermelon into medium-sized chunks
Freeze on sheet pan, about 45 minutes-1 hr
Blend watermelon in batches (depending on your blender size) with equal parts of the ginger beer and lime juice
Pour into large pitcher and stir in the bubbly club soda right before serving
Garnish with fresh lime wedges and cute little umbrella for ultimate summer flair
Tips
  • You can easily half this recipe or double!
  • If you want to make it boozy, I recommend vodka, Tito's is my favorite option for this drink
