  • 1 medium courgette/zucchini, sliced
  • 1/4 cup (50gr) white Greek yogurt
  • 1/3cup (50gr) all-purpose flour
  • 2 eggs
  • Optional seasoning (oregano, paprika)
  • Salt and pepper to taste
Instructions

In a bowl or blender mix together the Greek yogurt, flour, eggs, optional seasoning, salt, and pepper until well combined.
Heat a non-stick pan over medium heat and lightly coat it with cooking spray or a small amount of extra virgin olive oil.
Dip each courgette/zucchini slice into the mixture, ensuring it’s coated on both sides.
Transfer the coated slices to the preheated pan and cook for about 2-3 minutes on each side, or until golden brown.
Once cooked, remove the courgette/ zucchini bites from the pan and set them aside on a plate.
Serve them on their own or with your favorite dipping sauce.
