Keto Zucchini Pizza Bites
Recipe details
Ingredients
- 20 thick slices of Zucchini (Roughly 3 small zucchinis sliced)
- ½ tbsp Olive oil
- ½ c Keto-friendly low carb marinara sauce
- 1 c Mozzarella shredded cheese
- 20 Slices pepperoni
- Italian seasoning to taste
- Grated parmesan cheese to garnish
- Salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees.
- Cut 20 thick slices of Zucchini, and toss them in ½ tsp of olive oil.
- Place the zucchini slices on a rack on a baking sheet, and sprinkle with salt and pepper to taste.
- Bake for 10 minutes, and remove from the oven.
- Top each slice of zucchini with a thin layer of keto-friendly marinara sauce.
- Place some of the mozzarella cheese on each zucchini slice, and top each slice with pepperoni.
- Sprinkle on Italian seasoning to taste and bake for 5-10 minutes until the cheese is melted and browned on top.
- Remove the zucchini pizza bites from the oven and let them sit for a few minutes. Garnish with some grated parmesan cheese and serve.

In the ingredients list is says “ 1/2 tbsp Olive oil “but in the 2nd instruction it says to toss the 20 thick slices of zucchini “in 1/2 tsp of olive oil”.
Can you please clarify as what happens to the rest of the half tablespoon if only a half teaspoon is used? Or is it a misprint. I’m English so we tend not to use C or c as a measurement. I’m guessing it’s a “ cup” measurement though.
