The smell and taste of fried vegetable patties is irreplaceable. They are so tasty, and very simple and easy to prepare! Grate everything, add seasoning and eggs and fry. Easy peasy. Anyone can prepare.

The vegetable patties my dear grandmother made for us every Friday, and that's the smell I love at home! Fry with just a little oil and transfer at the end of the frying to absorbent paper to complete the absorption of the oil. You're probably asking yourself why not bake the patties and that's it? My answer is that it just doesn't work and doesn't pass in terms of taste when it's baked, it's nice and that's where it ends, and the next day it's not to my taste. I prefer to follow the original preparation method. By the way, the patties in my opinion are super tasty the next day, without even heating, directly from the fridge into the sandwich with the hot eggplant and hot matbucha. The patty for me can stay cold and be eaten directly from the fridge, so tasty!!!

Ingredients
Ingredients:
  • 1 large potato
  • 2 large zucchinis
  • 1 medium sweet potato
  • 1 medium carrot
  • 1 large onion (or 2 small ones)
  • 1 bundle of parsley (only the leaves)-finely chopped
  • 3 eggs
  • 5 tablespoons of breadcrumbs or flour or cornstarch
  • 1 flat tablespoon of salt
  • 1 tablespoon black pepper
Instructions
Preparation:
Grate all the vegetables in a food processor. After chopping, squeeze them well to remove the liquids. After removing the liquids transfer them to a large bowl, add to the mixture the eggs, spices and breadcrumbs and knead with your hands into a unified mixture.
Heat a pan with oil (not much oil is needed), take the mixture and with your hands and shape them into meatball shaped patties and place them in oil, fry on both sides until browned.
Remove to absorbent paper.
Easy, light food and tasty.
