Adding sweet potato to my morning oatmeal it kinda boring, and it’s no texture at all. While outside is snowing and give a a hint to make a twist on my breakfast. I am making sweet potato pancakes without any sugar or syrup and it has lots nutrients from the sweet potato, sesame and almond flour. It’s crunchy, sweet and chewy. Your mouth will feel like a wonderland, mochi? Pancake? Or crispy fried? , you tell me:)

- One purple sweet potato about half pound
- Two tea spoon coconut oil
- Blanched almond flour
- Roasted sesame seeds
- Sweet rice flour 3/4 cup
- Mike or water 1/4 cup
Instructions
- Peel the sweet potato and steam in the instant pot for 20mins in stream setting
- Mashed the sweet potato after it done cooking, add one tablespoon coconut oil
- Add sweet rice flour into the mixture
- Add water or milk
- Molding it or form it by hand about a 1/4 inches height circle
- Heat the pan and add coconut oil.
- Spread the almond flour and sesame one a plate , padded the pancakes with the almond flour and sesame
- Put it into the heated pan , an lower the temperature to low and covered for about 10mins when done flipping it to other side and repeated the same steps
