Sweet Potato Pancakes

So. I am not a great cook. I do it because we have to eat, not because I love it. Truth be told, I'd rather clean and decorate the kitchen rather than cook in it.


However, with a family I do my fair share of it.


Sometimes I get everything just right - like my super famous eggplant pizziola - sometimes not.


And sometimes, I make a mistake that turns out better than what I had planned...like with my sweet potato pancakes!


I had planned to make sweet potato fries, but when the slicing went all wrong, I had to think on my feet and turned those uneven cuts into shreds.


Fabulous.

Now they're a menu staple!

Ingredients

  • 3 large sweet potatoes
  • 3 tablespoons of flour
  • 1 egg
  • 1 teaspoon of minced onion flakes
  • A dash of salt
  • Olive or vegetable oil for frying
Instructions

Rinse sweet potatoes off, peel and shred them.
Then in a large bowl, mix shredded potatoes, flour, egg, minced onion and salt together.
Pour a small amount of oil into a large frying pan on low heat.
Use hands to form small pancakes. Place in pan and fry for about 4 minutes on each side. Less, if you don't want them to be super crispy.
Remove them and place them on a paper towel for a bit.
Tips
  • You can use fresh minced onion if you like...I'm just lazy.
  • You can serve them with sour cream or syrup if you like.
