These sweet potato fries are so fun and so healthy. I love making them for an afternoon snack or even as a side for a mid-week dinner. The natural sweetness of the sweet potatoes pairs beautifully with the aromatic spices which create the perfect balance of salty and sweet. Another great part of these fries is that they are so easy to make, with such a healthy outcome. This snack accommodates almost all dietary restrictions and can be made almost at a moment's notice. If you are in a particular hurry, skip the soaking step and go straight to the coating. You can also prepare the sweet potato ahead of time and leave them in the refrigerator soaking overnight, as long as they are kept covered.

  • 1 large sweet potato, peeled
  • 1 tbsp cornstarch
  • 1/2 tsp chili powder/ chili flakes
  • 1/2 tsp sweet paprika
  • 1/4 tsp garlic powder/ garlic granules
  • 1 dash of black pepper
  • 1-2 tbsp olive oil
  • salt, to taste (I prefer to use a grinder but table salt can also be used)

Cut the peeled sweet potato into strips around 2/3 inch (1.7 cm) wide and 2.6 inch (7cm) long.
Place the sweet potato strips into a medium-sized glass bowl and fill it until the sweet potato is immersed with cool water. Let it sit for one hour.
Preheat the oven to 425 F (220 C) and line a baking tray with parchment paper.
Using a colander, dispose of the water and rise the sweet potato again using cool water. Dry off the sweet potato using a tea towel.
Transfer the sweet potato into a medium-sized bowl (if using the same bowl as before, make sure to rise it out and dry it off completely first).
Toss the sweet potato in the cornstarch using your hands.
In a small bowl, mix together the chili, paprika, garlic and pepper.
Toss the spice mixture into the sweet potato until combined well and evenly coated. Then, toss the olive oil in.
Arrange the sweet potato on the baking paper, and ensure that they aren't touching each other as that can prevent them from baking evenly. If you feel like the pan is overcrowded, you can divide the sweet potato over two pans.
Grind or sprinkle salt over the sweet potato to taste.
Bake for 15 minutes, and remove the tray from the oven. Flip over each of the fries. Place the tray back into the oven for another 15 minutes or until the fries begin to brown, particularly at the edges.
Serve hot with ketchup or other sauces of your choice.

These turned out great. I cut thinner peices and did not cook as long. I had wax paper and they stuck pretty bad. Tried again and sprayed the wax paper with olive oil first. That helped a lot.

I don't think wax paper is meant to be put in the oven. The wax will melt! You should be using parchment paper.

Why do you soak the fries before cooking them?

to make the starch come out, it makes for a more crispy fry.
