Baked Feta Cheese With Gnocchi and Tomatoes
Baked feta gnocchi is bursting with Mediterranean flavor! It is loaded with sweet grape tomatoes, roasted mushrooms, tender potato gnocchi and salty feta cheese. The best part is this easy weeknight meal takes only 10 minutes to prepare!
If you are looking for a creamy, cheesy comfort meal that is also an easy recipe to whip up, then this delicious gnocchi recipe is for you! I know everyone was in the feta pasta TikTok craze so I thought making a variation with gnocchi would be a fun twist!
This tastes so rich and decadent that it's hard to believe a serving comes in under 350 calories! This easy dinner will definitely become a family favorite. It's loaded with veggies but with such a delicious sauce even the picky eaters will give this a thumbs up!
Many people actually confuse gnocchi with a type of pasta. While gnocchi did originate from Italy it is actually a small dumpling made from flour, egg and potatoes. There are so many different ways to flavor gnocchi, including my family's favorite truffle gnocchi!
gnocchi- potato gnocchi is available at most local grocery stores in the pasta section.
feta cheese- Feta is a Greek cheese made from sheep's milk or a combination of sheep and goat's milk. It is formed in a block and aged in a brine. It has a crumbly texture and salty flavor.
grape tomatoes- small grape or cherry tomatoes are perfect for this recipe. They are small enough in size you do not have to chop them. Plus I find these small tomatoes are always sweet and flavorful!
basil- fresh basil really adds so much flavor to this dish. I can not recommend using dried basil in place of fresh herbs.
Preheat oven to 400 degrees Fahrenheit. Add grape tomatoes, sliced garlic cloves and mushrooms to a 13x9 inch baking dish. Pour the olive oil and salt and black pepper over the vegetables and stir well to coat.
Nestle the block of feta into the center of the baking dish, scooting the vegetables aside.
Place the baking dish in the preheated oven for 30 minutes. The tomatoes and mushrooms will roast while the cheese becomes warm and melty.
While the vegetables are roasting start a large pot of water to boil for the gnocchi.
Remove the baking dish from the oven and add the chopped spinach and basil leaves. The heat from the roasted veggies will wilt the spinach.
Use a spoon to stir everything together and break up the block of feta.
Add the gnocchi to the boiling water and cook according to the package directions. The gnocchi will begin to float to the top when they are cooked which takes about 2 minutes.
This is a fantastic meatless meal, loaded with lots of healthy vegetables. If you want to add some extra protein, you can serve with grilled chicken or fish. Serve with a piece of bread to soak up the extra sauce. Add a light salad and a glass of wine to complete the meal!
To store any leftovers, allow the cooked gnocchi to cool completely. Store in an airtight container for 2-3 days. Reheat in the microwave for 1-2 minutes.
In Italy gnocchi is traditionally served in a light butter sauce with fresh sage.
The “g” in gnocchi is actual silent, making the correct pronunciation “noh-kee”.

Ingredients
- 3 cups grape tomatoes
- 8 ounce package mushrooms, sliced white button or baby Bella
- 1/3 cup olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 8 ounce block feta cheese
- 1 cup loosely packed baby spinach leaves, chopped
- 2 tablespoons basil, fresh chopped
- 16 ounce package gnocchi
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- In a large baking dish place tomatoes and mushrooms. Pour olive oil over the vegetables and stir to coat. Sprinkle with salt and pepper.
- Clear a space for the block of feta cheese in the center of the vegetable mixture.
- Bake in preheated oven for 30 minutes.
- While tomatoes and mushrooms are roasting, bring a pot of water to a boil and cook gnocchi according to package directions.
- When the vegetables are finished roasting after 30 minutes, the tomatoes will be soft and blistered.
- Stir in the chopped spinach and basil. The heat will wilt the leaves. Use your spoon to break up the melty block of feta cheese.
- Add the cooked gnocchi to the dish and stir to coat everything in cheese.
