Gnocchi Bolognese Bake

This dish sums up comfort food. A rich, beef bolognese, with gnocchi and three cheeses. Baked in the oven until crispy on the top, it's a perfect meal to eat on the sofa after a long day.
The gnocchi are really quick to cook as well, I usually have some store bought packet gnocchi in the fridge ready to go for a quick meal. I have made my own gnocchi from scratch before, but I honestly don't think it's necessarily worth the effort, a good store bought packet will do the job, especially when used in a dish as flavoursome as this!

Ingredients
- 500 g ground beef
- 1 onion
- 3 cloves garlic
- 1 beef stock cube
- 2 tins chopped tomatoes
- 2 tbsp tomato puree
- 1 bunch basil
- 500 g fresh gnocchi
- 100 g ricotta
- 1 ball mozzarella cheese
- Sprinkling of parmesan cheese
Instructions
- Brown the ground beef all over on a moderate heat in a large frying pan. Once brown, but not necessarily cooked through, set to one side
- Dice the onion and fry in the leftover oil. Once golden, add the diced garlic cloves and cook through until fragrant.
- Add the tomato puree and cook off for a couple of minutes
- Add the beef back to the pan, along with the tinned tomatoes, beef stock cube and 400 mL water
- Bring to the boil and allow to simmer for an hour or so, until the sauce is silky and rich. Add a few stems of basil after 30 minutes.
- Once the bolognese sauce is ready, preheat the oven to 200C
- Boil the gnocchi for 2 minutes and drain. Add a layer to a casserole dish, and add a thin layer of the bolognese sauce. Take a teaspoon and add a few dollops of ricotta, a few pieces of torn mozzarella, a couple of basil leaves and season. Repeat this process a couple more times until the gnocchi and bolognese sauce are all used up.
- Sprinkle the top with parmesan and bake in the oven for 15 minutes until golden
- Enjoy!
