Baked Gnocchi in Butternut Squash Sauce

September has slowly arrived and I got into a brutal autumn mood, and that can be seen on my cooking as well. The cinnamon has come out of the pantry, my shopping basket was filled with various pumpkins. And if it’s cold weather, it means that more comfort food has been put on the table for dinner. And there’s nothing better on a rainy evening than a good baked gnocchi in pumpkin sauce with lots and lots of cheese. Super fast and easy to make. If, on the other hand, you want a more challenging one, make your pasta at home.

Ingredients

  • 1/2 butternut squash, cut into small cubes
  • 150 g gnocchi, done
  • 150ml heavy cream
  • 1 mozzarella, cut into slices
  • thymes
  • salt and pepper
Instructions

In a small pot cook the butternut squash until it is softened. Mix it together with the heavy cream in a food processor. Season with salt and pepper, thymes.
In another pot cook the pasta.
Preheat the oven to 220 C.
Pour the pumkin mixture into a baking dish, place the gnocchi on top, arrange the mozzarella slices on top and bake for 20 minutes.
