Ingredients

  • 1 block of feta cheese (200-250g)
  • 3 tomatoes, chopped
  • 5 tablespoons olive oil
  • 4-5 garlic cloves, peeled
  • handful kalamata olives
  • Red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish
Instructions

Preheat your oven to 170 degrees Celsius (350 degrees Fahrenheit).
In a small oven-safe baking dish, combine the peeled garlic cloves and olive oil. Add in the tomatoes and olives. Cover the dish with aluminum foil and place it in the preheated oven.
Allow the mixture to roast for 25-30 minutes until the garlic becomes soft and golden brown.
Take the dish out of the oven and place the block of feta cheese in the center. Season with salt, black pepper, and red pepper flakes (if desired).
Put the dish back into the oven and bake for approximately 20-25 minutes, or until the feta cheese becomes soft and starts to melt around the edges. The cherry tomatoes should also start to release their juices.
Remove the dish from the oven, and sprinkle the dish with fresh basil leaves for a vibrant touch. Serve the baked feta immediately while it's warm, alongside crusty bread slices to spread the melted cheese onto.
