Ingredients

  • 3 white onions, peeled and roughly chopped
  • 3 carrots peeled and sliced
  • 2 cups peas
  • 75 ml Thai green curry paste
  • 6 fillets cod fish
  • 1/2 bunch coriander, roughly chopped
  • 3 stalks spring onion
  • 400 ml coconut cream
  • 4 heads bok choy
Instructions

In a large saucepan, on medium-high heat, sauté onion and carrots for five minutes, stirring occasionally.
Add in the peas and then stir in the green curry paste until evenly distributed.
After five minutes, add in the fish, gently tossing so as not to separate the fillets too much.
Next, add in the coriander and spring onion, followed by the coconut cream and stir lightly.
Finally, add in the bok choy, letting it sauté on top and gently stirring it in lightly. Don't mix it in too much or let it sit for too long (maximum five minutes) as the bok choy is best still a little bit firm.
Remove from the heat and serve immediately.
