Try this delicious spicy and smokey tomato courgetti today for this weeks meat free Mondays! 🌶️


Looking for a low carb option for dinner this evening. They try courgetti. Using a spiralizer to creat long thin spaghetti like strands, it’s the perfect low carb alternative for this pasta dish.


The sauce compliments is so well, with its Smokey but spicy tomato taste. Chucking in peppers and mushrooms as well your dinner is loaded with healthy vegetables!

Ingredients

  • What you’ll need.. (2 servings)
  • - 2 courgette
  • - 1 tin chopped tomatoes 
  • - 1 red onion
  • - 1/2 red pepper
  • - 6 mushrooms
  • - 3 cloves garlic
  • - 1/2 tsp Smokey paprika, 1/2 tsp chilli powder, 1 tsp oregano, 1 tsp basil
  • - 1 veggie stock cube
  • - 1 tsp brown sugar
  • - 2 tsp balsamic vinegar
  • - 1 heaped teaspoon of tomato purée 
  • - 1/2 tsp Harrisa paste 
  • - 1/2 salt 1 tsp pepper 
Instructions

1. Finely chop onions and garlic and soften in a saucepan for a few minutes. Repeat the same process with your pepper.
2. Now add in the spices and cook out for a few minutes. Add tomato paste and repeat
3. Next add in your tomatoes, stock, vinegar, herbs, chopped mushrooms and 1/2 can of water. Stir well and simmer for approx 30 mins. Stir occasionally.
4. Using a spiralizer, slice your courgettes into thin strands. Heat up a frying pan, lightly salt and pepper the courgette and fry for a few minutes until soft. Toss to fry all sides of the courgette.
5. Serve your courgetti strands with your delicious sauce on top!
Tips
  • As a low carb option you may chose to serve along side some garlic bread.
