Falafel Waffle With Tomato Salad

Falafel waffle is fun to pronounce and even more fun to prepare! We make it gluten free by using GF flour and baking powder, but feel free to use standard ingredients if you’re not celiac or following a gluten free diet.

When we make ‘rea’ falafel, it’s a big production of soaking the chickpeas overnight. Who has time for that? Falafel waffles give, you the taste and crispy texture of falafel with the convenience of using canned chickpeas and cooking them in a waffle maker.


Nothing could be faster or easier! Just roughly chop the onion and garlic, then throw everything into the food processor.

Pulse it until mixed while the waffle iron is heating up.

An ice cream scoop makes quick work of portioning the mixture in the waffle iron.

These take twice as long to cook as a typical waffle (about 6 minutes for us), but your waffle iron may be different. So keep an eye on the first batch as it cooks to determine your own cook time.


We serve it with a quick tomato salad. You can also add a dollop of yoghurt or more tahini sauce.

Ingredients
Waffle:
  • 1 can of chickpeas drained and rinsed
  • 3 tablespoons chopped red onion
  • 1 clove garlic chopped
  • 3 Tbsp lemon juice
  • 2 Tbsp tahini
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • 2 cubes frozen parsley thawed (or 1/4 cup fresh parsley)
  • 1/2 tsp GF baking powder
  • 2 Tbsp Bob’s Red Mill Gluten Free Flour
  • salt and pepper to taste
  • 1 egg
Tomato Salad:
  • 1 cup cherry tomatoes halved lengthwise
  • 1/2 cup sliced cucumbers cut in half
  • 2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
Instructions

Preheat your waffle maker. Coat with avocado oil spray to prevent sticking.
Place the chickpeas and the rest of the waffle ingredients into a food processor. Pulse to combine until well mixed. Set aside.
Combine the tomato salad ingredients in a separate bowl and set aside.
Using a 1/4-cup measuring cup or equivalent ice cream scoop, place the falafel mixture into the 4 quadrants of the waffle maker. Cook until nicely brown (about 6 minutes).
Place two waffles onto each plate and top with the tomato salad.
