This recipe is creamy and velvety with a touch of tanginess from the lime. I hope you like this creamy coconut lime cauliflower mash.


What is not to like about the new FAVE veggie.... "Cauliflower"! The hype for this vegetable is incredible. It is so versatile and you can prepare many delicious recipes. From cauliflower rice, roasted cauliflower, buffalo cauliflower bites, creamy soups, dips and why not a velvety creamy mash. A healthy alternative to your typical mashed potato dish.


This time I used coconut milk instead of regular milk to add more flavor. I also added a touch of lime to brighten the flavors. Just few ingredients to a great yummy dish to accompany your favorite meat or fish.



I made a simple cilantro lime olive oil dressing to add a layer of flavor and pop of color.

Few ingredients to make a delicious cauliflower mash.

I love how the touch of lime brightens this dish and balance all the flavors.

Here is the final dish with my fave, blackened Artic char fish.

Creamy Cocunut Lime Cauliflower Mash

Ingredients

  • 1 small head of organic cauliflower
  • 3/4 of a cup Coconut milk
  • 1/2 small White onion ( diced)
  • 1 garlic clove
  • 2 TBSP of grass fed butter
  • Zest of 1 lime
  • 1 tsp of lime juice
  • Pinch of turmeric powder for color
  • Salt and Pepper to taste
Instructions

First, steam the cauliflower until tender about 20 minutes. While this is cooking, sautee the onion & garlic in butter until soft ( about 5 minutes)
I used the hand blender but maybe better to use the food processor to puree the cooked cauliflower, onions and garlic and add the coconut milk. Pulse until desired consistency. I added the zest of a lime and a drizzle of lime juice to brighten the flavors of this dish.
And it is ready to serve!
Serving suggestions: Pan seared Salmon, Braised Short rib, Chicken Milanesa
