This is for all of my mashed potato lovers that want a healthy yet FLAVOR packed alternative! This Creamy Mashed Cauliflower is to die for. The smooth texture, creamy cheese, and smokey paprika pack a punch of flavor! It will be a go-to for your dinner side dish. I wont be surprised if you end up liking it more than mashed potatoes. Ingredients

  • 1 small head cauliflower
  • 1/2 cup shredded gouda cheese
  • 1 Tablespoon unsalted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon heavy cream
  • 1/2 teaspoon dried parsley
Instructions

Wash cauliflower head and cut into florets. Steam cauliflower in a cauliflower basket. If you do not have a steamer basket, boil the florets in water.
Once fork tender, drain in a colander and dress the excess water out by pressing a small plate against the cauliflower.
Transfer the cauliflower to a food processor and process until smooth. Add in the butter, cream, gouda cheese, salt, pepper, paprika, parsley. Blend until super smooth and creamy. Garnish with extra cheese and parsley.

    try another variation: after steaming and removing excess water, after adding the cauliflower to the blender, add 1/3 of Tahini sesame paste, juice of one lemon and 1/2 t spoon salt. Cauliflower Hummus . Garnish .

    I add garlic add goat cheese. I mash with a stick blender.

    No cream necessary.
