The smooth texture, creamy cheese, and smokey paprika pack a punch of flavor! It will be a go-to for your dinner side dish. I wont be surprised if you end up liking it more than mashed potatoes. Sneak this dish into your next meal or bring it to your holiday event coming up and see if anyone even notices, or better keeps talking about how amazing they are. I created this dish because my husbands favorite food is mashed potatoes and he is a type 1 diabetic. He adores these and I am sure you will also. Enjoy friends!

  • 1 small head cauliflower
  • 1/2 cup shredded gouda cheese

  • 1/2 teaspoon paprika

Wash cauliflower head and cut into florets. Steam cauliflower in a cauliflower basket. If you do not have a steamer basket, boil the florets in water.
Once fork tender, drain in a colander and dress the excess water out by pressing a small plate against the cauliflower.
Transfer the cauliflower to a food processor and process until smooth. Add in the butter, cream, gouda cheese, salt, pepper, paprika, parsley. Blend until super smooth and creamy. Garnish with extra cheese and parsley.
