Easy, breezy and oh so cheesy 😍 The perfect way to describe one of my favourite side dishes for any holiday meal . . . cheesy cauliflower bake! Switch up those boring boiled vegetables with this crowd pleading side dish that will spice up your upcoming holiday get togethers. PS - this tastes delicious with broccoli too!


Tender cauliflower comes together is the most perfectly silky smooth homemade cheese sauce. Top it off with bread crumbs for a nice added crunch.

PS - using half broccoli and half cauliflower (3 cups of each) is also SO tasty!

Ingredients

  • 6 cups chopped cauliflower (cut into bite sized pieces)
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 and 1/4 cup - 1 and 1/2 cup of milk of choice (I used 1%) *
  • 1 Tbsp Dijon mustard
  • 1 Tbsp hot sauce
  • 1 tsp of each; garlic powder, onion powder, salt and pepper
  • 3/4 cup shredded cheese (I like to use cheddar)
  • 3/4 cup seasoned bread crumbs
Instructions

Bring a large pot of water to a boil. Add in cauliflower and cook until just tender, about 8-10 minutes. Strain and set aside.
While the cauliflower cooks, preheat the oven to 400 degrees. Prepare a 8 X 8 baking dish with some cooking spray or little bit of oil. Set aside.
In a medium sauce pan, melt butter over medium heat. Once melted, whisk in flour and cook for minute or two.
Slowly pour in milk about 1/4 cup at a time while whisking the flour mixture, ensuring that no lumps remain. Continue adding in the rest of the milk in small batches until all the milk has been added and the mixture is thick but smooth.
Lower heat to medium and stir in mustard, hot sauce and spices.
Next whisk in the shredded cheese until smooth.
Add cooked cauliflower to prepared baking dish. Drizzle over the prepared cheese sauce and use tongs to ensure cauliflower is fully coated.
Top with bread crumbs and bake for about 15 minutes.
Serve hot and enjoy!
Tips
  • The amount of milk you need will fall between 1 and 1/4 cup to 1 and 1/2 cup. Start at the lower end and add in more if your mixture is too thick.
