These brussel sprouts are absolutely delicious and the perfect way to introduce someone to them that might be hesitant to try them! These brussel sprouts are sliced thinly, which I think can help bring down some of the bitterness that is attributed to these delicious little vegetable. They are also warmed and crisped up and then tossed with a delicious lemon-butter dijon sauce! This is absolutely delicious on its own as a side, pairs nicely in tacos, or would make a delicious “bed” for your protein of choice! I also love having it with eggs and sweet potatoes for a hearty breakfast!I hope you give these a try and convert a non-brussel sprout fan into a true believer! Tip: If you have a mandolin, this is a great time to whip it out. 1. Wash your brussel sprouts

2.Thinly slice!

3.Saute them in a preheated pan coated in olive oil.

4.Prepare your lemon butter dijon sauce.

5.Coat your brussel sprouts in the sauce.

6.Serve them in your favorite dish!

7.I like topping mine with walnuts and pomegranate seeds! Pairs beautifully with the lemon butter sauce! Enjoy!

Ingredients

  • 12-16 oz brussel sprouts
  • 1 tbsp unsalted butter
  • ½ juice of a large lemon
  • 1 tsp dijon
  • ¼ tsp garlic powder
  • Salt and black pepper to taste
  • Olive oil spray
Instructions

Wash and slice your brussel sprouts into thin strips.
Preheat a saute pan and spray some olive oil, just enough to coat the pan. Toss in your brussel sprouts. While the brussel sprouts cook down, in a microwave safe bowl, heat up 1 tbsp of butter.
In the bowl with the melted butter , add in the lemon juice, dijon, garlic powder and salt and pepper. Mix until combined.
Cook the brussel sprouts for about five minutes over medium heat. Mix occasionally, and you should see some pieces starting to crisp up.
Add in your lemon butter sauce to the brussel sprouts and stir until well combined. Cook for an additional 3-4 minutes. Serve and enjoy! Can be stored in the refrigerator for 3 days!
