Summer is in full swing and do you know what that means?! In my house, it’s all about enjoying GOOD food, hangin’ outside and getting together with friends. And in my opinion, no backyard hang out is complete without some serious delicious snacks! This recipe can also be made on the bbq so they are a perfect addition to a back yard bbq.


These jalapeño stuffed mushrooms are a definite crowd pleaser and oh so tasty! Tender mushrooms are stuffed full of crumbled sausage, smooth cream cheese and pickled jalapeños. I love using pickled jalapeños because I find them a bit less spicy and I love the tang they bring to this recipe.

Ingredients

  • 24 white button mushrooms
  • 1/2 cup ground sausage (about 2 links)
  • 1 clove garlic, minced
  • 4 oz cream cheese, softened
  • 3 Tbsp pickled jalapeños, chopped
  • 1/2 cup shredded cheese
  • 1/2 tsp each salt and pepper
  • 2 Tbsp olive oil
Instructions

Preheat your grill to medium heat.
Prepare the mushrooms by washing, and thoroughly drying them. Remove the stems and finely chop them. Set the stems aside. Use a small spoon to remove the gills of the mushroom, scraping them out to create a hollow center. Set the whole mushrooms aside as well.
In a large frying pan, brown sausage until cooked through and crumbled, about 5-6 minutes.
Add in chopped mushroom stems and garlic. Sauté until mushrooms are tender and garlic is fragrant, about 4-5 minutes.
In a small mixing bowl, add hot sausage mixture to softened cream cheese, jalapeños, shredded cheese and seasonings. Mix to combine together. Set aside.
Use a silicone pastry brush to coat the outside of the mushrooms with oil.
Using a teaspoon, begin filling mushrooms with sausage mixture. Gently press filling into the mushrooms.
To cook, place filled mushrooms on bbq safe grill pan or bbq safe silicone baking sheet on the grill. Cover and allow to bake for 5-7 minutes, until cheese is warm and melty.
Remove from the bbq and top with green onions to garnish. Enjoy hot. YUM!
Tips
  • To make this recipe in the oven, preheat your oven to 375. Place prepared mushrooms in a baking dish and cook for 10-15 minutes until golden brown and bubbly. Enjoy!
