Cold Tofu Salad

Western Canada is experiencing a massive heat wave this week and all I can think about is eating cool foods. We’re taking minimal cooking that requires one to stand over the stove for hours or to turn on the oven. My go-tos include salad, salad rolls, vermicelli bowls and cold noodles


For Mother’s Day this year, we ordered take out from an izakaya restaurant and one of the dishes was a salad with cubes or tofu in it. I loved it and had an idea for a tofu salad. My version focuses on the tofu instead of the greens. You can add more greens if you’d like and make it a whole meal. Or I’ve also eaten it with rice and it’s equally as good as the rice soaks up all of that dressing.

Ingredients

  • 1 container of soft tofu
  • 1 tbsp water
  • 3 tsps black vinegar
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1/2 tsp sugar
  • 1 garlic clove, minced
  • 1-2 tbsp roasted sesame seeds
  • 2 stalks scallions, finely minced
  • Handful of micro greens or greens of your choice
Instructions

Open the container of tofu and drain. Very gently dice up the tofu and transfer to your serving dish.
In a small bowl, combine the remaining ingredients and spoon over tofu
Top with the micro greens and enjoy.
