Refreshing Blueberry Ginger Mocktail

I've been in love with mock-tails this August especially when I find them so easy to make. I love that it is also non-alcoholic to share with loved ones who prefer it that way. Recently, I played around with some blueberries and decided to make a refreshing drink to combat the summer heat. Blueberries and ginger is one of my favorite combinations and I think it's such a fresh drink for the season. This recipe is easy to make and has minimal hands on time. Just need to wait for the blueberry ginger syrup to cool down (the hardest part!) and you're essentially good to go. I hope you enjoy this fun, beautiful drink as much as I do.

Ingredients

  • 4 1/4 cups water
  • 1 1/4 cups fresh blueberries
  • 3/4 tablespoon grated ginger
  • 5 tablespoons granulated sugar
  • 3-4 cups club soda
  • Ice cubes
Instructions
Blueberry Ginger Syrup
In a medium-sized pan, add water, blueberry, and ginger. Allow to all come to a boil. Once it begins to boil, add the sugar, mixing until it dissolves into the mixture.
Lower the heat and mash the blueberries. Then, let the mixture simmer for around 15 minutes.
Remove from the heat and cover with cling wrap. Set aside to cool down as well as absorb all the flavors. Once cool, use a sieve to strain the syrup to remove lumps. Transfer to a bowl and refrigerate until ready to serve.
Assembly
Fill the cup with 1/2 cup of syrup. Add ice cubes.
Pour the club soda over top. Stir to combine.
Garnish with your favorite toppings! ( I did blueberries and mint leaves :) )
