Zucchini Bread With Cheese
Making zucchini bread with cheese is super easy and fun. This quick bread recipe is savory, moist, and great for with brunch, lunch, dinner, or as a savory breakfast toast.
If you don’t think you’d like zucchini bread, this is the recipe for you to try. It’s simple but the zucchini makes it so tender and moist. Quick bread doesn’t require any rising or proofing either so you don’t have to worry about your loaf flopping!
One of the best things about making zucchini bread is that it’s packed with some extra vitamins and minerals without much flavor. Zucchini is mild to begin with so once we add it to a bread recipe with cheese…you don’t even know it’s there!

Anywho, moving on to the quick bread at hand…yes, quick bread is different from regular bread! Quick bread doesn’t do any proofing or rising really. It’s not like a traditional bread that would require kneading, etc.
The title of quick bread gets thrown onto any recipe that doesn’t use yeast typically! These types of recipes are more like cakes in that they use baking powder, baking soda, or both to rise the dough instead of yeast.
Because they do not need time to proof (rise) with the yeast, they can be completed much more quickly…hence the very clever name that I did not come up with but am perpetuating 😉
What will I need to make zucchini bread with cheese?
Not only is this a quick bread…it’s also a simple one. We’re not using anything super exciting or wild in this recipe. In fact, some of these things you will likely already have on hand.
In addition to the zucchini and the cheese you will need flour, baking powder, baking soda, salt, milk, vinegar, eggs, butter, and green onions!
This is a savory bread recipe which is excellent for paring with your favorite salads, dinners, and more. You can also enjoy this as part of a savory breakfast with eggs or veggies. It’s so easy to make you’ll want to enjoy it all summer long as those zucchini become plentiful in the garden!
This recipe is really simple to prepare and serve. Once you try it out you will be hooked. It is one of my favorite recipes for using zucchini. It never fails that all the zucchini want to be ripe at once and I’m overwhelmed and trying to find ways to use them…this is one of our favorite recipes for using zucchini.

Preheat oven to 350 degrees
Prepare 9×5 loaf pan with nonstick spray
Shred zucchini then wrap in towel and squeeze out excess liquid, set aside
In a large bowl whisk together flour, baking powder, baking soda, and salt until well combined
In another bowl whisk together milk and vinegar then add in melted butter and egg
Add wet mixture to dry mixture and stir just to combine
Stir in zucchini, cheese, and onion and mix lightly
Pour into pan
Bake 1 hour
Cool 10 minutes in pan then remove and cool completely on wire rack
Slice, serve and enjoy!

Zucchini Bread With Cheese
- 1 ½ cups zucchini, grated
- 2 cups flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup milk
- 1 tablespoon vinegar, white or apple cider
- 1 egg
- 3 tablespoons butter, melted

- 2 green onions, chopped fine
