Roasted butternut squash soup-my favorite soup. I created this in college and I am so happy to share with you now. There have been some improvements I have made over time. For instance, I used to puree this with a blender…made quite an explosive mess of butternut squash all over my apartment walls. Let’s just say I have since learned what an immersion blender is and it’s become one of my most precious kitchen tools.
