Butternut Squash Soup

Another comforting fall and winter classic! Butternut squash soup is one of the easiest, all you need is squash and broth. Spice it up with some herbs and spices of choice. For a creamier soup, you can add cream, sour cream, or Greek yogurt. I topped off these bowls with some fresh ground pepper and grated parmesan cheese which really took it to a new level!


I had made a roasted chicken nights before and used the bones to turn into broth. I highly suggest making your own broth to enhance the flavor, but you can use chicken or veggie stock for the sake of simplicity and time.

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 1 garlic clove, minced
  • 4 cups butternut squash, cubed
  • 3 to 4 cups vegetable or chicken broth
  • 1 tbsp dry thyme
  • 1 tsp dry sage
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • parmesan to serve (optional)
  • cream to serve (optional)
Instructions

Heat olive oil in a pot then add the diced onions & minced garlic
Saute until translucent then add the butternut squash and spices
Pour in the broth of choice and simmer until the squash is tender
Once the squash is tender, use an immersion blender or add the contents to a blender
Blend until smooth then serve
Garnish with freshly grated parmesan cheese, pour in some cream, and add freshly ground pepper
Tips
  • Use frozen, pre-diced butternut squash to save some prep time
