Literally you're going to taste the rainbow in this colorful, healthy and fresh bell pepper salad

Bell peppers have a lot going for them. They're low in calories and are packed with immune system boosting nutrients and vitamins such as vitamin A, C, potassium, folic acid, and fiber. For that and because they're so delicious, bell peppers can be added to any salad to give it an added crunch and a ton of flavor. Also, you can have bell peppers on their own or dipped with hummus as a simple snack, replacing chips or other snacks that are high in calories.

This recipe is so fresh and is better had on a hot summer day.

Ingredients

  • 4 multi color bell peppers
  • 4 tomatoes
  • 6 small Lebanese cucumbers or 1 English cucumber
  • 1 bunch of finely chopped basil
  • 1 bunch of finely chopped mint
  • olive oil
  • 2 lemons juiced
  • Salt and pepper to taste
Instructions

wash all the vegetables
cut the bell pepper in half and remove the seeds inside
chop the veggies in small, fine cubes
chop the mint and basil very fine
add all the veggies in a large salad bowl
add olive oil, lemon juice, salt and pepper to taste
blend all the ingredients and serve immediately
Tips
  • If you're not planning on consuming the salad in one sitting. Add the lemon and olive oil on your individual plates. Because once you add lemon to a salad it makes it wilt faster.
