Chocolate Covered Watermelon

Sounds yummy right? The combination of chocolate and watermelon alone is a winner and add a sprinkle of sea salt on top and it takes it to another level. We’ll be seeing watermelon all over the farm stands and stores soon so save to your Summer recipes!

Place watermelon on a cutting board, cut in half and then in half again, make eight slices from on of the wedges

I made mine about 4 inches wide at the rind end

Blot both sides with paper towels to remove excess moisture, this will allow the chocolate to adhere better

Melt chocolate chips and coconut oil, I did this in the microwave in 39 second increments, stirring in between, you can also use a double boiler if you wish

Dip each slice leaving some of the fruit showing at the top

place on lined baking sheet

Sprinkle each with a little sea salt

Let harden in fridge and enjoy! 🍉

Ingredients
For the chocolate coating
  • One bag chocolate chips, I used milk chocolate
  • 1 Tsp coconut oil

  • Watermelon cut into wedges

  • Sea salt
Instructions
Prepare the watermelon
Cut the watermelon in half, the in half again, then cut into eight wedges.
Remove excess moisture from the slices
Place a paper towel over each slice and on both sides, press down slightly to remove excess moisture, this will allow the chocolate to adhere
Melt chocolate
Pour the chocolate chips and coconut oil into a glass bowl and microwave in 30 second increments stirring In between each time until melted and combined
To coat
Dip each slice into the chocolate letting a half inch or so of the red watermelon still show

place on parchment lined baking sheet, sprinkle each with sea salt and place in refrigerator until hardened
