How to Make Chocolate Covered Peeps for Easter Treats

Ingredients

  • 12 marshmallow bunny Peeps
  • 12 oz. bag semi sweet chocolate chips
  • 1 Tablespoon refined coconut oil
  • 12 mini marshmallows
Instructions

Cut the mini marshmallows in half with a knife or with kitchen shears. You will need half of a marshmallow for each of the chocolate covered Peeps pops.
Insert a long lollipop stick into the bottom of each Peep. Push the stick almost to the other end of the Peep, but be careful not to push it all the way through. Repeat with each Peep and set aside.
Pour the chocolate chips into a microwave safe bowl. Heat on high for 30 seconds and stir. Then heat for another 30 seconds and stir well. If the chips are not melted, heat for another 15 seconds.
When the chocolate is melted, carefully remove from the microwave. Add the coconut oil and stir well.
Hold a Peep by the stick over the melted chocolate. Use a spoon to coat the bunny in chocolate. Cover it well and let excess chocolate drip back into the bowl.
Place a half of a piece of marshmallon on the bunny for a tail.
Stand the chocolate covered Peeps in a cup or jar to dry. Repeat the process for the remaining Easter bunny marshmallow Peeps.
Package the chocolate dipped Peeps for Easter treats in cellophane bags tied with ribbon.
