Chocolate Covered Tahini Cookies

Are you the type of person who loves cookies but sometimes feeling guilty when you eat too a lot? Cos I am! But need not to worry as I will be sharing a healthy-ish recipe so you can enjoy the cookies even if you eat it all in one sitting!

This is quick and easy and you can eat it in less than an hour!

All you need is 5 main ingredients.


Gluten-free flour - I bought mine from my local Trader Joe's but you can use any Gluten-free flour of your choice


Ground Almonds - I couldn't find ground almonds from any of my local stores so I bought a sliced ones and just put it in a food processor myself 😊


Tahini - this I also got from Trader Joe's (let's just say I bought a lot of stuff there LOL)


Maple Syrup - I got an organic maple syrup from Costco


Chocolate - I used a chocolate melting wafers (I love Ghirardelli!)

Ingredients

  • 1/2 cup gluten-free flour
  • 1/2 cup ground almonds
  • 1/2 tsp baking powder
  • 1/4 cup tahini
  • 1/4 cup maple syrup
  • melted chocolate to cover
Instructions

Preheat oven to 350F.
In a large bowl, mix all the gluten-free flour, ground almonds and baking powder. Add in the tahini and maple syrup and mix until fully combined.
Roll the dough out and cut it using a round cookie cutter (or and shape of your choice) then arrange it on a baking sheet lined with parchment paper.
Bake for 8-10 minutes depending on your oven settings. Let it cool before dipping in the melted chocolate.
Chill in the fridge for about 30mins or toss it in the freezer for at least 10mins for the chocolate to set.
Share with others or eat it all by yourself. Enjoy!

      Tahini is so fantastic you will eat it with a spoon out of the jar (: I love that stuff! It’s toasted, hulled sesame seed butter! It’s about the same nutritionally as peanut butter, many a little less protein but packed with antioxidants and goodness. It’s also high in good fats.
