Although Christmas day has come and gone, these tiny Christmas tree sandwiches are still perfect for the holiday period that is still in full swing. Have people dropping by unannounced and nothing to offer them to eat for a snack? No problem, these can be whipped up in minutes and with mainly storecupboard ingredients (except for the ricotta). And if you can't get ricotta where you are, you can substitute with another soft cheese, such as soft goat cheese, cream cheese or other. The taste will still be great.

Then serve with a festive drink or an aperitif and it's job done.

Ingredients
  • 2 slices of extra wide sandwich bread
  • 1 cup ricotta cheese
  • 1 tablespoon pesto
  • Pistachio granules
  • Olives, thinly sliced
Instructions
In a bowl, mash the ricotta with a fork to soften it. Then, mix in a tablespoon of pesto to create a creamy spread.
Spread half of the pesto-infused ricotta on one slice of sandwich bread. scatter some sliced olives and then place the other slice on top and spread the remaining mixture over the surface.
Cut the bread into slices, forming little triangles. Here come our little Christmas trees!
Now, add the decorations. I sprinkled some pistachio granules on top. but if you prefer you can also use corn, diced tomato or other.
There you have it – our adorable and colorful Christmas trees, ready to bring joy to your holiday celebrations!
