Homemade Pineapple Salsa

Two recipes in one, this fiesta coconut shrimp is made with a homemade pineapple salsa that is delicious enough to eat right out of the bowl, but paired with some plant-based coconut shrimp from Wild.Skinny.Clean (made with konjac root), this meal is a new favorite any time of the year!


If you have time, prepare the pineapple salsa a few hours in advance of the meal - or overnight - to let the tropical essence from the pineapple marinate with the rest of the pineapple salsa ingredients. But, if you need to whip this up in a hurry, it will still taste delicious!

Ingredients
Fresh Pineapple Salsa
  • 2 cups diced pineapple
  • 1/2 medium red onion, finely diced
  • 1/3 cup diced sweet bell pepper, color of choice
  • 2 large cloves garlic, minced
  • 2 tbsp cilantro, chopped
  • 1 large jalapeno, diced (seeds discarded)
  • 1 large lime, zest and juice
  • pinch of coarse sea salt
Instructions

Combine pineapple, red onion, jalapeno, sweet bell peppers, garlic, cilantro, lime zest and juice, and sea salt. Stir to thoroughly combine. Serve immediately or allow to marinate in the refrigerator to merge flavors.
