Two recipes in one, this fiesta coconut shrimp is made with a homemade pineapple salsa that is delicious enough to eat right out of the bowl, but paired with some plant-based coconut shrimp from Wild.Skinny.Clean (made with konjac root), this meal is a new favorite any time of the year!

If you have time, prepare the pineapple salsa a few hours in advance of the meal - or overnight - to let the tropical essence from the pineapple marinate with the rest of the pineapple salsa ingredients. But, if you need to whip this up in a hurry, it will still taste delicious!

Grab the recipe for the pineapple salsa below, and check out the details on the blog for the flavor-packed Fiesta Coconut Shrimp Bowl!

The original blog post was written in collaboration with Wild.Skinny.Clean, but the views and opinions are solely those of the author.

Pair with plant-based coconut shrimp, rice, black beans, and the garnish of your choosing for a festive one-bowl meal.
