Summertime means lighter meals and more grilling in our home. It also means we have plenty of fresh fruits and vegetables on hand! One of our favorite summer time snack is this Pineapple Salsa with fresh pineapple served with tortilla chips!

But this slighly sweet and spicy salsa isn't just for chips anymore! It's also makes the perfect side to whatever you're grilling (fish, shrimp, chicken)and we love it over top my Coconut Rice recipe along with Grilled Garlic Shrimp! It's truly like having the Caribbean in your mouth! The salsa is super fresh and jam packed with flavor! And it's good for you too!

Ingredients
Pineapple Salsa
  • 2 cups chopped fresh pineapple
  • 1 medium red onion (diced)
  • 2 medium tomatoes (chopped)
  • 1 cup peppers (diced) I use a mixture of green, yellow, red, and orange
  • 1/4 cup fresh cilantro (chopped)
  • 2 Tablespoons Lime Juice
  • 1/2 teaspoon salt
Instructions
To make the Pineapple Salsa
Combine the pineapple, tomatoes, onion, and peppers in a large mixing bowl. Add in the lime juice, salt, and cilantro. Mix well. Chill in refrigerator until ready to serve
