Quinoa Salad

There is nothing like a super quinoa salad to make you feel super good and energized. For me quinoa is a great alternative for rice and pasta. Not only filling, but it's super healthy. It's packed with nutrients and it's great for the a healthy digestive system. It's low in fat but very filling. It's definitely an absolute favorite of mine. This super salad also contains some great ingredients such as pomegranate seeds and parsley which are rich in vitamins and antioxidants.

This salad is easy and quick, give it a try and let me know what you think 😉

Toss all the ingredients together and enjoy

Make sure the quinoa is cool before adding the veggies to it

  • 1 cup tricolor quinoa, cooked and spiced with cumin
  • 1 bunch parsley finely chopped
  • 1 bunch mint finely chopped
  • 1/2 bunch cilantro finely chopped
  • 1 cup pomegranate seeds
  • 3 Tomatoes finely chopped
  • 1 radish thinly sliced
  • 1/2 cup green onions finely chopped
  • 1 Avocado sliced
  • 1 lemon juiced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Cool the quinoa and spice it with 1 tsp of cumin
Add the veggies and dressing, toss all together and enjoy
  • Wait until the quinoa cools of before adding the veggies
