Orzo Salad With a Lemon Mustard Dressing
Most people have had some kind of pasta salad, but have you tried an orzo pasta salad with home made dressing?
I started by cooking 1 cup of orzo pasta in a little olive oil and salt, then drained the water and let it cool.
I was always really intimidated making home made salad dressing but it is so freaking easy!!
Mix 1/4 cup extra-virgin olive oil, 1 teaspoon Dijon mustard, 1/2 teaspoon honey , 1 teaspoon finely grated lemon zest and 1/2 fresh squeezed lemon.
Mix the dressing all together and add it to the cooled pasta.
I don't know if you can call this a salad since it doesn't have any veggies just yet!
Dice 1/4 diced sweet onion and 1 large diced red pepper. I personally am not a big fan of cucumbers in my pasta salads and don't care for tomatoes but those may be a good addition as well!
Chop 1/2 cup of fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, scallions or mint. I had scallions and parsley so that's what I went with. Add 1/2 cup pitted and halved olives.
I loved the lemon taste!

The dressing
- 1/4 cup extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- 1 teaspoon finely grated lemon zest
- 1/2 fresh squeezed lemon
The salad
- 1 orzo pasta
- 1/4 diced sweet onion
- 1 large diced red pepper
- 1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, scallions or mint
- 1/2 cup pitted olives, halved
- Optional: cucumbers or cherry tomatoes
Instructions
- cook and drain the pasta
- let it cool
- mix all the ingredients for the dressing and add it to the cooled orzo
- add all the veggies
