Sweet Berry Salad
The other day I opened my fridge to make our classic lettuce and veggie salad for dinner, and I realized I had no lettuce. Great, dinner was ruined. While I angrily shoved things around in the fridge, I noticed my giant tub of spinach. I don't usually enjoy salads that only have spinach as the greens, but I decided to give it a go in a final attempt to save dinner, and I'm so glad I did! Sometimes the best kitchen ideas around here come from desperation. We love this salad, its so easy and so healthy, and it tastes and looks like something you would get at a restaurant.The ingredients are simple. Just some baby spinach topped with bell pepper, cucumber, blueberries, strawberries, and of course feta. It takes less than 5 minutes to throw all this in a bowl and then you are good to go. I use a homemade strawberry balsamic dressing (recipe is below!) for this salad, but feel free to top with any fruity dressing you prefer.

Ingredients
For the Salad:
- 8 cups baby spinach
- 1 bell pepper, chopped
- 1/2 cup chopped cucumber
- 1/2 cup slices strawberries
- 1/2 cup blueberries
- 1/3 cup feta cheese
For the Strawberry balsamic dressing:
- 2 tablespoons olive oil
- 3 tablespoons balsamic glaze
- 1 tablespoon lemon juice
- 3 strawberries, minched/smushed
- 1 teaspoon granulated sugar
- salt and pepper to taste
Instructions
- In a large bowl, toss together spinach, pepper, cucumber, sliced strawberries, blueberries, feta cheese, set aside
- In a small bowl, whisk together olive oil, balsamic glaze, lemon juice, strawberries, sugar, salt and pepper
- Pour dressing over salad immediately before serving
