Maple roasted Brussels sprouts and sweet potato salad is such a versatile dish. It can be the perfect side dish for a special occasion steak dinner or for a normal week night meal of baked chicken. It can also be turned into a main dish by mixing in cooked, diced chicken sausage or throwing a fried egg on top. It is an easy, delicious, and healthy recipe anyway you decide to eat it.

Ingredients

  • 1lb fresh Brussels sprouts, sliced into quarters
  • 1lb sweet potatoes, peeled and diced
  • 1/4 cup toasted pecans, chopped
  • 1/4 cup feta cheese
  • 4 tbsp. Olive oil
  • 1 tbsp. Maple syrup
  • 1 tbsp. Balsamic vinegar
  • 1 tsp. Dijon mustard
  • Salt and pepper to taste
Instructions

Preheat oven to 425 degrees.
Toss Brussels sprouts and sweet potatoes in 1 tbsp. Olive oil, salt and pepper.
Place on a baking sheet and bake for 30min (tossing halfway through baking)
Meanwhile, whisk 3 tbsp. Olive oil with maple syrup, balsamic vinegar and mustard in a small bowl.
Place roasted vegetables in a large bowl and stir together with feta cheese and pecans.
Pour dressing over and toss to coat.

      It could be served either way! We ate it warm that night and then I ate is straight out of the fridge the next day for lunch. Delicious either way!
