Ingredients
Salad
  • 1 small purple cabbage
  • 1 small white cabbage
  • 2 large carrots, peeled
  • 1 cup edamame beans, shelled and cooked
  • 4 sprigs, spring onion
  • 1 packet (85 grams) instant noodles
Dressing
  • 1 tbsp sesame oil
  • 1.5 tbsp smooth peanut butter
  • 1 tsp chili flakes
  • 1 tsp dried ginger
  • 3 tbsp honey
  • 3 tbsp soya sauce
Instructions

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Thinly slice all of the cabbage. Place in a large serving bowl. Shred in the carrots and add them to the bowl. Add in the edamame beans.
Thinly chop the spring onion and add it into the bowl.
Remove the packaging from the instant noodles and place them into the preheated oven. You can add in the flavoring that comes with the noodles.
Place the noodles in the oven and cook for 5 minutes. Take them out and let them cool off for a few minutes. Break them into chunks and set aside.
For the salad dressing, add all ingredients into a small bowl and stir well until fully combined.
Sprinkle the noodles around the salad and then pour on the dressing.
Serve straight away.
