Strawberry Lemon Blondies

If you only pick one strawberry dessert to make this spring or summer, these delicious little blondies have to be the one. They are so easy to make. They are tender and soft and the frosting that melts in your mouth. You’ll find yourself with a sweet and gooey dessert that everyone will just devour.

- Allow your eggs and butter to come to room temperature before you begin mixing.
- Watch them closely while baking – they can dry out rather easily if they are overbaked.
- Allow them to completely cool before adding the frosting. If the blondies are still warm, then the frosting will begin to melt.
Strawberries are our favorite in these blondies, but if they aren’t yours, you can easily switch it out. Try making these with blueberries, raspberries, or even blackberries. Any of those berries make a great combination with lemon. Adding in some white chocolate chips would also be delicious!
If you have any leftover blondies, they can be stored in an airtight container on your counter or in the fridge for about 2-3 days.

Ingredients
For the Blondies:
- 1 cup butter (room temperature)
- 3/4 cup granulated sugar
- 1 egg
- 2 1/4 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup strawberries (diced)
- 1/4 cup lemon juice
- 1 tablespoon lemon flavoring
- neon pink and neon yellow food coloring gel (optional)
For the Frosting:
- 4 oz cream cheese (softened)
- 2 tablespoons butter, room temperature
- 3/4 cup powdered sugar
- 1/2 teaspoon vanilla
- 1 tsp neon pink food coloring gel
Instructions
- Preheat your oven to 350 degrees. Line an 8×8 baking dish with parchment paper
- In the mixing bowl of a stand mixer, mix together the butter, sugar, and egg until light and fluffy.
- In a separate bowl, mix the flour, baking powder, and salt, until well blended.
- Add a teaspoon of neon pink food coloring gel to the strawberry half, and add neon yellow food coloring gel to the lemon half.
- While the blondies are cooling, prepare the frosting.
