Almond lemon blondies, aka almond lemon bars, are packed with flavor thanks to the crushed almonds and zest punch that may be increased or reduced based on how much you love a lemon citrus flavor.

Unlike a regular blondie recipe, this one will involve baking in 2 stages.

  • Unsalted butter
  • Unsalted almonds
  • Almond extract
  • White granulated sugar
  • Eggs

But wait! What is the difference between blondies and brownies?


The simple explanation is that brownies are bars with chocolate in them, while blondies don’t have any chocolate in them but have the same fudgy consistency.

Can I use oil as a substitute for butter in this recipe?

I recommend not swapping out the butter to maintain the flavor integrity of this recipe.

I’m also biased regarding butter and prefer using Kerry Gold butter in my treat recipes for flavor escalation.

Can I use salted almonds instead of unsalted almonds?

You could substitute lightly salted almonds if you have nothing else in the pantry, but I would recommend sticking to unsalted almonds for the recipe.


Can you freeze lemon bars /blondies?


Cool the almond lemon bars/blondies after baking and once cooled (or at room temperature), wrap each one in aluminum foil

or plastic food wrap

to ensure the squares don’t crumble/get crushed or mushed into other squares.


Place these in a freezer-safe container

or freezer-safe bag

.


These last well for at least 3 months.

Will-power may not allow you to keep these blondies in the freezer any longer!

How to Make Almond Lemon Blondies


1. Start by preheating the oven to 325 degrees Fahrenheit.

Once done, grease and prep your 9 x 13-inch pan with butter. Set this aside to use when ready.

2. Take a large mixing bowl (or your stand mixer) and mix 1/2 a cup of confectioner’s sugar with 2 cups of all-purpose flour.

3. Add to this the butter and mix till well combined.

4. Now add the crushed almonds and almond extract.

Combine well till the almonds are mixed well into the dough.

5. Spread this dough in the prepared baking dish and ensure the dough evenly covers the bottom of the pan.


6. Place the pan in the oven and bake the dough for 15-20 minutes.

7. While baking the dough, prep the filling by mixing sugar with 1/4 cup of all-purpose flour.

8. Add eggs, baking powder, lemon juice, and lemon zest to this.

Combine well till the mixture is smooth.

9. By now, your dough will be ready.


Take the pan out of the oven and spoon the mixture just prepared over the dough.

Ensure this is evenly spread over.

10. Once done, place the pan back in the oven and bake for an additional 25-20 minutes till golden brown.


(The center may jiggle a bit. That’s okay.)

11. Take the pan out of the oven and set aside to cool.

When cool, cut the blondies/bars into squares and serve.

(You can sprinkle confectioners sugar over the top before serving and a few gratings of lemon zest. Either or both are completely optional.)
